This is my go to recipe for special occasions. You can only make this recipe on special occasions because they are so full of calories. Yeah, if you're looking for a low cal recipe, you should just leave now. Cuz, this is not it.
People often have strong opinions about creamy mashed potatoes versus chunky mashed potatoes. I personally love chunky mashed potatoes. So, I say make'em chunky! For creamy mashed potatoes, mix them well, just until they are the consistency you want. If you over mix, you risk gummy potatoes. Yuck.
Another factor in the taste and texture is the type of potato you choose to use. Your everyday Idaho potato will give you a hearty mash that will be enhanced by salt. However, the Yukon Gold will produce a creamier mash (even when left chunky), a beautiful color, and a rich flavor. When I want to make a special dinner, I always us Yukon Gold.
Tip: The smaller you cute the potatoes, the faster they will cook, but the easier it is to over cook. Yes, you can over boil a potato.
This ingredient list is enough for a potluck size crowd (between 15-20 people).

Chef's knife
Large Sauce Pot

Ingredients:
17 lbs potatoes, peeled, and cut into cubes
1/ 2 cup diced onion
3-4 whole garlic cloves
1 tbs Salt
1/4 cup milk (omit if using Yukon Gold)
3/4 stick or 6 tbs butter
4 oz cream cheese, room temperature
1/2 cup sour cream (lite or full fat)
Salt & Pepper, to taste
Step 1: Peel and trim the ends of the garlic. Using a chef's knife, with the blade facing away from you, use the side of the blade to press down firmly on the clove until the garlic cracks. You do not want to crush it, just open it to release the garlic
Step 2: Bring potatoes, onion, garlic to a boil in a large pot of water
Step 3: When water comes to a boil, add salt
Step 4: When potatoes are tender, drain water
Step 5: Return potatoes to the pot and pick out any large pieces of garlic
Step 6: Add cream cheese, sour cream, and salt and pepper to taste. (If using, add milk)
Step 7: Cover the pot with a lid and let stand for 5 min allowing the butter, cream cheese, and sour cream to soften
Step 8: Using a potato mash, mash to desired consistency.
Step 9: TASTE IT! Add additional salt and pepper to taste
