SOUTHWEST CHICKEN & VEGGIE ROLLS

These little rolls are amazing. We love them. These are a take on a dish I really like at a restaurant I'm not that crazy about. It's the only dish I order. I decided I could probably make these at home and so I did some digging and found some "copycat" recipes. Running with a mix of a few different recipes, here is my version.


I think you could use the chicken mix on a tostada and it would taste great with some lettuce and avocado. Or leave the chicken out all together for a Meatless Monday dinner!


EQUIPMENT

  • Large Skillet

  • Sheet Pan

INGREDIENTS

  • 1 Chicken Breast, cooked and shredded

  • 1 Red Bell Pepper, finely diced

  • 4 Scallions (Green Onions White), finely diced

  • 1/3 cup Frozen Corn

  • 3 tbsp Canned Diced Jalapenos

  • 1 cup Fresh Baby Spinach

  • 1-15 oz can Blacked Bean

  • 2 tbsp Cilantro, finely chopped

  • 1/2 tsp Ground Cumin

  • 1/2 tsp Chili Powder

  • 1/8 - 1/4 tsp Cayenne Peppers

  • 1/3 -1/2 cup Shredded Cheese Mix (Monterey, Colby, Cheddar or "Mexican Style Blend")

  • 2 tsp Olive Oil

  • 16 Flour Tortillas, fajita size

INSTRUCTIONS


Step 1: Pre-heat oven to 475 degrees F.


Step 2: In a large skillet, heat olive oil (add spray oil if needed) over medium heat. Add corn and heat through until thawed. Add bell pepper, onion, jalapenos, chicken, and all seasonings and cook, continuing stirring occasionally until onion and bell pepper soften, about 1-2 min.


Step 3: Add spinach and cook until all leaves have wilted. Add beans and cheese, stirring until cheese has melted and is mixed through. Remove from heat.


Step 4: While the mix cools, heat tortillas in the microwave just until warm. (Note: if tortilla cool while making the rolls, re-heat in microwave.)


Step 5: Using a large spoon, add one scoop of mix to the tortilla and roll. Lay them seam side down. Spray all sides of each roll with cooking spray or brush with oil.


Step 6: Bake in oven for 10 min. Increase oven to broil and bake until tortillas are desired color and texture. Keep a close eye as they will burn fast.


Step 7: Remove from oven and let stand for 5 - 10 min, until cool enough to eat.
