PEANUT BUTTER SANDWICH COOKIES

David 2 loves these peanut butter cookies. We were watching ATK as usual, and they were making these cookies. David instantly said, "We're making that!" It's become a family favorite. I've made them with creamy peanut butter and with chucky peanut butter. I've made it with roasted peanuts and raw salted peanuts. Any way you make'em, they are so good. Sometimes, I dip'em in chocolate.


These cookies are so versatile, that one time I forgot to add the chopped peanuts to the cookie dough batter! I had already baked the cookies! So I just added them to the filling. LOL. Still the best PB cookie around!


The only caution I have is: DO NOT use natural PB. It does not set up well for a cookie.


Here is the basic recipe. You can make them with a different filling with PB, honey, and cinnamon. YUMMMMMMMY!






Because there are so many variations, read through the recipe before making these awesome cookies.


Yields 24 Sandwich Cookies


(Ya, we're Dallas Cowboys fans! Hence the coffee cup...that's David's. )







Ingredients:


Cookie:

  • 1/2 cup Raw Unsalted Peanuts (or salted, or roasted - your choice)

  • 3/4 cup Peanut Butter (or chucky - your choice)

  • 3 tbsp Unsalted butter

  • 1/2 cup Granulated Sugar

  • 1/2 cup Brown Sugar

  • 1 egg

  • 3 tbsp Whole Milk (or cream, or 2% milk - your choice)

  • 3/4 cup AP Flour

  • 1 tsp Baking Soda

  • 1/2 tsp salt (if using salted peanuts, omit)

Filling:

  • 3/4 cup Peanut Butter

  • 3 tbsp Unsalted Butter

  • 1 cup Confectioner's Sugar (or, 5 tbsp Honey and 1/2 tsp Cinnamon)

Instructions:


Step 1: Using a food processor, pulse peanuts until finely chopped. Set aside. (You can do this by hand as well or buy them pre-chopped or just use chunky peanut butter.)


Step 2: Microwave peanut butter and butter for 30-40 seconds. Mix thoroughly with a rubber spatula.


Step 3: Add granulated sugar, brown sugar, milk. In a separate bowl, beat egg well and add to PB mix. Using a whisk, mix thoroughly.


Step 4: In a separate bowl, add flour, baking soda, and salt; mix thoroughly. Add to PB and mix together with a rubber spatula.


Step 5: With a cookie scoop (size 60 or 70) or a tablespoon, line up cookie dough balls on baking sheet 2 inches apart.

  • FOR A CRISPY COOKIE: Lightly wet your finger tips and gently press the cookie dough into a flat circle about 2 inches wide.

Step 6: Bake in a 360 degree oven for 12-15 mins on middle rack, rotating half way through. You can bake two sheets of cookies at a time. If you do this, when you rotate the cookies, rotate racks as well.


If making a crispy cookie, remove when edges are slightly brown.


If making a chewy cookie, cookies will seem underdone and soft when you remove them from the oven, but that is ok.


Step 7: Remove cookies from oven and let cool.


Step 8: Make filling. Microwave peanut butter and butter for 30-40 seconds. Mix thoroughly with a rubber spatula.


Step 9: Mix in rest of ingredients until thoroughly mixed.


Step 10: With a cookie scoop (size 60 or 70) or tablespoon, add filling to the flat side of one cookie. With a second cookie, gently press the flat side against the filling, using just your fingers. Press too hard and cookie will crack.


Step 11: Let sit for 10-15 mins to allow filling to set.


Step 12: Eat 'till your heart is content!
