We've been crafting lettuce wraps for years, and while they were always tasty, our culinary journey and evolving palates inspired an upgrade. These wraps have now reached the pinnacle of deliciousness, and they've earned a spotlight. They're not just good; they're an explosion of flavors, keeping carbs and fats low while delivering a protein punch. We've even taken it up a notch by using 99% lean ground turkey, known for its mildness and tendency to dry out, yet this recipe still shines with flavor.
INGREDIENTS
Wrap
One head of lettuce
Soy Fusion
1 tbsp Sambal Oelek, Ground Fresh Chili Paste
2 tsp Brown Sugar or Swerve, Brown Sugar Replacement
2 tbsp Lite Soy Sauce
Filling
2 tbsp Olive Oil
5-6 Scallions, whites and greens chopped (set aside 2 tbsp greens for garnish)
1 Serrano Pepper, diced (if looking for less heat, remove seeds and ribs before dicing)
1 Green Bell Pepper, large dice
1 Clove Garlic, diced
5 large White Mushrooms
16 oz Ground Turkey, 99% Lean
Pinch of Salt / Pepper
1 tsp Ground Cumin
1/2 cup Frozen Sweet Peas
1/4 cup Cilantro, finely chopped
INSTRUCTIONS
Using a knife, remove core of lettuce and remove and discard outer layer of leaves
Carefully remove leaves and rinse under cold water
Set wash leaves on a couple of layers of paper towels absorb excess water
In a small bowl, whisk all ingredients for Soy Fusion and set aside.
In large pan, head olive oil on medium high
Add scallions, serrano, bell pepper and sauté until tender (4-5 mins), stirring occasionally
Add garlic and sauté 1-2 mins
Add mushrooms and sauté until softened
Add ground turkey w/pinch of salt and pepper, ground cumin, breaking up the turkey as much as possible. Continue cooking and stirring occasionally until turkey is cooked through, about 8 mins
Add Soy Fusion and mix thoroughly
Remove from heat and add peas and cilantro, mix thoroughly
Get to eating!!!
