CHORIZO TOSTADAS

These are great change of pace for the average tostada night. This is our spin on a recipe from our favorite recipe site, ATK.


Yields 6-8 Tostadas (depending on how high you top them lol)

INGREDIENTS

  • 6-8 corn tortillas

  • 2 tbsp Oil

  • 2 cups Shredded Cabbage

  • 2 tbsp Chopped Jarred Jalapenos

  • 4 tbsp Jarred Jalapeno Brine Liquid (will be used 1 tbsp at a time in different parts of this recipe)

  • Salt/Pepper

  • 1/2 cup Crema Mexicana or Sour Cream

  • 4 tbsp Fresh Lime Juice (will be used 1 tbsp at a time in different parts of this recipe)

  • 1/2 lb Mexican Beef or Pork Chorizo

  • 1 1/2 cups Frozen Corn

  • 1/4 cup Chicken Broth

  • 1 - 15 oz can of Pinto Beans or Black Beans, drained

  • 1 cup Cherry Tomatoes, quartered

INSTRUCTIONS


Tostadas:

  1. Set rack to middle, and pre-heat oven to 350 F

  2. Line a baking sheet with foil and place in oven to heat

  3. Lightly brush both sides of the tortillas with oil

  4. Lay tortillas flat (in single layer) on lined baking sheet to become crisp. Check and flip frequently. Some tortillas may crisp faster than others. Remove them when they reach desired "crispiness"

  5. Move tortillas (which are now Tostadas through the magic of an oven) to a separate plate

  6. Keep oven on and save foil lined sheet for use in next step

Chorizo and Corn:

  1. Using the same foil lined baking sheet, spread the corn in single layer across the sheet

  2. Using your hands, break up chorizo in chunks and drop on the top of the corn

  3. Place in oven for 10-15 min or until chorizo is browned and done

  4. Remove from oven and transfer to a bowl. Mix with tomatoes and 1 tbsp lime juice

While chorizo and corn are in the oven:

  1. Beans

    1. Mash beans with chopped jalapenos, broth, and 1 tbsp jalapeno brine liquid in a microwave safe dish

    2. Microwave on high for 2-4 mins or until hot

  1. Slaw

    1. Combine shredded cabbage, 3 tbsp jalapeno brine liquid, 1 tbsp lime juice, and salt/pepper (let sit at least 5 min)

  2. Crema

    1. Combine crema/sour cream with 2 tbsp lime juice

Mix, match, layer toppings to your tastebud's content! We like:

  1. Tostada

  2. Beans

  3. Chorizo and corn

  4. Slaw

  5. Crema

But that's just us... you do you! :) Enjoy!
