So this is an Alton Brown recipe. It's one of our favorite ways to eat Salmon. Of course, we made some modifications because, well we like a little heat and we like our salmon a little more well done.
David and I saw Alton at a live cooking show in Tucson many years back and had the best time. Learned a lot. He's actually really funny!
Ingredients
1/2 to 2 pounds Salmon, pin bones removed
1/3 cup dark brown sugar
2 tbsp lemon zest
1 1/2 tsp kosher salt
1/2 tsp freshly ground black pepper
1/2 tsp crushed red pepper flakes (an Underwood addition)
Instructions
Step 1: In a small bowl, combine all the ingredients
Step 2: Place salmon skin side down on a foil lined baking sheet. (Sometimes I spray the foil with cooking oil to help keep the skin from sticking.)
Step 3: Cover fish evenly with brown sugar mix. Set aside for up to 45 minutes, at room temperature
Step 4: Place one rack in the middle of the oven and one rack at the top of the oven. Preheat the oven to 450 degrees F
Step 5: When oven comes to temperature, bake salmon for 15-20 mins
Step 6: Move the salmon to top rack and turn oven to broil. Leave salmon to continue to cook for another 5-6 minutes or until thickest part of the salmon's internal temperature is 140 - 145 degrees F
Step 7: Let salmon rest for 10 min before serving
